When a Caribbean person tries Peruvian ceviche

The flavors of the Caribbean are unique, diverse and provocative. They reflect the sun, the heat, the sea and of course, everything that history has brought to this area over time.

Faithful to their flavors, the Caribbean person enjoys onion, garlic, cilantro, tomatoes, Cubanela chili peppers, salt and pepper as the basis of their meals.

Therefore, when they suddenly encounter the flavor of Limo, yellow, Rocoto, Panca or Mirasol chili peppers that mark the leading role of Peruvian gastronomy, it is as if they were transported to another world, an unknown and daring one, which restarts their palate from scratch.

There are various versions of Peruvian ceviche, according to the region or town where it is prepared. The truth is that this dish is as spectacular as it is simple. All you need is a good fresh white fish, lemon, onion, chili pepper, salt and cilantro. Depending on personal or regional taste, celery, ginger, yellow chili pepper and ajinomoto are added.

In the Caribbean, ceviche takes on a different personality, different flavors, and even different presentations. The Caribbean version of this dish includes red, yellow and green peppers, tomatoes, black and/or green olives, chives, and spices like pepper. This version is a party of colors that reaches the eyes, enters the mouth and intoxicates the body of the person who eats it with joy.

But… What happens when a Caribbean person tries an original Peruvian ceviche? It changes their life; it makes them wonder if everything they had eaten really existed. When those capsaicin molecules from the Limo and yellow chili peppers envelop the palate of a Caribbean person, they set off on a new and radiant adventure, and the spiciness can scare them, but the flavor acts as a natural tranquilizer.

They can't stop, it becomes addictive from the first bite. The moment becomes a crossword puzzle, a guessing game that seeks a thousand answers while the palate tastes and approves what invades it through this affordable, simple and very easy to prepare proposal.
